This thick and creamy blueberry coconut breakfast smoothie is one of my favorite ways to start the day! It’s super energizing and filled with protein and healthy fats that make it deliciously satisfying.
I am the biggest smoothie fiend. I rarely go a day without one so I’m always adding new ingredients and coming up with new flavors to keep it interesting. I love blueberries because they’re not too sweet and are filled with antioxidants and the frozen coconut makes this smoothie incredibly thick and luscious! Hello dreamy texture.
You may be asking, why would I put zucchini in a smoothie? Not only is zucchini a great source of fiber, which helps with digestion, but it works as a replacement for more banana, so the smoothie is thick and creamy but won’t give you the dreaded sugar high and subsequent crash. The cinnamon and maca have health benefits of their own such as helping to stabilize blood sugar and regulate hormones, and they also add hints of spiced and caramel like flavors that make this smoothie even better.
This smoothie is super quick to throw together, just make sure you have all of the frozen ingredients on hand! I freeze big batches of fruits and veggies on the weekend to have them ready to grab for early and busy mornings.

- 1 handful kale
- ½ cup frozen coconut meat
- ¾ cup frozen blueberries
- ⅓ cup steamed then frozen zucchini
- ½ frozen banana
- 1 tbsp almond butter
- 2 tsp ground flaxseed
- 1 tsp maca
- 1 tsp cinnamon
- 1 serving protein (I like 100% organic hemp powder because it doesn't alter the taste or texture)
- 1 cup almond milk
- Place all the ingredients in a blender and blend on high for 1-2 minutes. The coconut and zucchini may take some time so keep blending until a smooth and creamy texture forms. Enjoy!
