Smoothie bowls are one of my favorite ways to start they day. They’re the perfect breakfast option because you can pack them with tons of nutrients and vitamins, and top them with anything and everything! This bowl in particular is such a winner, combining creamy avocado with antioxidant-packed acai, creating the best creamy texture! Within the past few years, acai bowls have quickly become the most popular, “healthy” fast food. Unfortunately, most of the ones sold are made with acai juice, containing tons of added sugars, and have no protein and little healthy fat, meaning they easily spike your blood sugar levels, and are not the best option for a balanced meal that will keep you sustained. Homemade acai bowls, including this avocado acai bowl in particular, on the other hand are completely customizable and I promise taste so much better!
Acai is a nutrient powerhouse, high in antioxidants and great for your skin and hair. This bowl is sweetened with half of a banana and strawberries, making it relatively low in sugar, and not overwhelmingly sweet. Avocado is the winning ingredient in this bowl by far, as it makes it so creamy and thick and provides a great source of healthy fats. Hemp seeds are a great addition for plant based protein and I love that they don’t change the taste, but if you don’t have them feel free to add chia seeds or your favorite plant based protein powder. Finally, the toppings are the perfect way to add some more nutrients and flavor! Crunchy granola, bee pollen, berries, and cacao nibs are some of my favorites, but feel free to get creative by adding whatever you have on hand! I can’t stress it enough, if you’ve never made your own acai bowl, you must try this one! Breakfast will be ready in less than 10 minutes, and will give you energy for hours!
- 1 large handful of spinach
- 1 packet unsweetened frozen acai
- ½ banana, chopped and frozen
- 1 cup frozen strawberries
- ¼ avocado
- 1-2 tbsp hemp seeds
- ½ cup almond milk
- Add all of the ingredients to a high speed blender in the order listed. Begin blending, stopping and scraping the sides with a spatula as necessary. The mixture will be very thick.
- Add more almond milk if needed, and blend until everything is well combined.
- Pour into a bowl, top with anything and everything, then dig in!
